I'd go for #3!
As a side, forgive me if I'm stating the obvious, but these are computer made reflections for the bookmatches correct? You may want to see them after they are cut just to make sure there aren't defects that show up somewhere that would otherwise deter you from your first choice.

I would go #2 for the top (straight grain, less possible problems) and #3 for the back and hope for matching sides...

Since I believe that integrity is the key to tone, and that integrity means "of a piece" essentially, flitch matched wood is actually a big deal. That is why my first choice will be to use Koa which walks the line between being ideal for the back and ideal for the top. My all Koa guitars are made this way, with straight grained wood that is interesting but not so fancy as to be weak enough to require more material than ideal. I simply cannot relate to trading performance for bling.

Sure. It's called propagation from cuttings or vegetative (asexual) propagation. Been around for 1000s of years.

My first choice was set #2 but someone beat me to it before I could make a decision so I went with the blonde Koa. The supplier did mirror one piece via computer but the set still looks beautiful in person. The figure seems consistent, the guitar got started last week and here are a few photos, if anyone is interested in seeing it once it's done then I can post those too it'll be about another couple months or so.
