Default Mystery string sound

I recently completed a walnut b&s, redwood topped OM. I made my own bone nut and saddle and the set up is right on at the nut. It is a bit higher than I like at the 14th fret, but playable. When I pluck any string, but especially the wound strings, I get an initial tone that then jumps in volume by a very noticible amount. It still sounds in tune, just louder. On the tuner I can see the needle jump as it settles back to center. I've checked the nut slots and there is no binding issue. Any ideas what would cause this?

Sounds like "bloom" . This is caused by the instrument being slow to respond to initial input, but coming around in time. Pity there seems to be no expert around your area to call on. . . Could be a stiff top and a loose back.
