How so? Aren't most live/stage-use vocal condenser mics (eg Sennheiser e865) SDCs? Or am I missing something...?

yep, very precise and clean around the edges.

A lot of mics sounds pretty good straight on, but their off-axis response can be pretty wacky and, face it, in most environments, although the main sound of a voice comes straight in at zero degrees, an instrument like an acoustic guitar has sound emanating from different areas of the body and neck.

Sounds coming in at 180 degrees (the back of the mic) or at any other axial point don't always do as well.

Put your headphones on, grab one of your mics and hiss or shhh continuously into it as you move from front to side to back. Listen for weird phase changes. The weird off-axis frequency response colors the sound and make it makes mixing more difficult.
