Might not be your thing. But Days of the New comes to mind. But they are more hard rock. Other than that all the MTV unplugged stuff.

Might be more on the side of "folk" but Simon & Garf's "Concert in the Park" is great. I'd get the video actually. Oh wait! I have it .

Wow- 3 pages deep and not a mention of Crosby, Stills, and Nash's first album: CSN... songs like "Suite: Judy Blue Eyes: and "Guinnevere" etc.. this is an acoustic must IMHO. Also their Deja Vu album is a classic. Great Martin tones on these.
Also I like: Cat Stevens- "Tea For The Tillerman" and "Teaser And The Firecat" Joni Mitchell- "Blue" , "Miles Of Aisles" almost any early stuff- later on "Night Ride Home" is a good one Jethro Tull- "Thick As A Brick" James Taylor-too much to mention now get busy Mike
