Default satin vs gloss neck

Can anyone please advise as to what the difference is between a satin and a gloss finish on the neck of a (high end martin)guitar, eg any difference in feel and sound etc.

No sound differences at all. Buy based on which you prefer the look of and the feel of.
Satin finish tends to feel smoother....gloss finished necks can, for some folks, get a bit sticky when that fretting hand gets sweaty.

I find that my hand slides smoother on a satin finish than a high gloss finish. Couple of my guitars have satin, others smooth. No difference in sound otherwise.
