It's hard to pass on Dylan, Guy Clark, or Townes Van Zandt. Or Prine. But those guys will get plenty of love, so I'm going to go with some Jerry Jeff Walker. And I like the original, circa 72 recording of 'Hill Country Rain', over any of his do-overs. The raggedly quality of the original works.
