Default Year to Year Guitar Changes?

I have an opportunity to purchase a Gibson J 35, model year 2016 for about $500 less than a current 2018 model. Do guitars change that much over a two year period?

If you mean "change" in specs, etc. - sometimes they do, but that particular model has not, as far as I know. A 2016 J35 will be essentially the same as a 2018 J35. If you mean "change" in quality, generally, a guitar will stay the same or improve over time (if well cared for); they don't usually get worse.
