Default Suggestion for a main course to feed 2600?

This September will be our third year putting on a community dinner on our town's Main Street. Last year we had 2,300 folks, about half the county. Folks show up with their drinks and side dishes and the event supplies the main dish. This year we're going to cap attendance at 2,600.

The first two years, we did pulled pork sandwiches. As we begin to plan this year's event, we're thinking that there has to be a less labor and resource intensive entree.

AGF is a pretty diverse bunch and I was thinking maybe some of us have experience in this realm and might share their experience.

Less labor intensive? Spaghetti? Sauce is the key though.

Baked ziti
Pasta and sauce
Grilled Kilbassa (or any sauasage) on a preztle roll
Southwest casserole (like baked ziti but with a south western flavor profile -tomato, cumin, chili, garlic, onions beans, corn, peppers, jack cheese, elbow macaroni etc..)
Lobster or crawfish Mac and cheese (Truffled - Optional)
Beef, chicken, pork chili (yellow rice)

You'll have to start early, but a lot of places will have a big bbq chicken pit they might let you use. Our church built one.

Polenta with 3 or 4 toppings (meat sauce, vegetarian tomato sauce, chicken topping like cacciatore, etc.). Holds up better than many pastas, and has a bit of a "special" tone to it that pasta does not.

Thanks for the suggestions. The whole idea of changing the entree is to simplify so we're looking for easy.

Can’t offer any suggestions sorry, but would just like to comment on what a positive thing it is for your community to come together like that. Nice to see that kind of neighborly spirit still alive and well.

Sea food boil, or roast a few pigs.. those are the easiest ways to feed a few thousand folks. Not that I would want to cook for that many folks. Let us know what you decide and how it turns out..

Take the advice of hundreds of church dinners everywhere: ham and beans. You buy the hams pre-cooked, just need to be heated, and beans - well, the turnout next year will be much lower.

I can't imagine cooking for that many people, but I guess stadiums and ball parks do it all the time.
