It’s great when a builder is so accessible, which is one of a number of contributing factors toward Emerald’s success.

About string/fretboard alignment, I understand what Alistair has provided as an answer, but I’m curious about what seems as variations between different versions of the same model of guitar as seen in the posted photos. Shouldn’t they all be the same one way or another? They don’t appear that way. Of course, as long as it doesn’t affect the tone or playability, it may not matter. Just curious.

Well they are set up by humans, so there will be some variation, even using a jig or template. Goodness knows my spacing varies when I've carved a new nut for a guitar. Emerald does more in a week than I've ever made, though.
