Bluegrass players tend to be traditionalists. I'm a grasser and a folkie. The best bluegrass guitars I have owned had a few things in common. First they had Adirondack tops. Second is the forward shifted scalloped bracing. However, how much power you need depends on who you are playing with. Sitka can work just fine, but some Adirondack will get louder before breaking up. I own a Custom Shop cannon with VTS Adirondack and Guatemalan rosewood. A new/used D-28 Marquis (now discontinued), the 2017 D-28, HD28V would be my favorites. I also play the HD28E Retro in bluegrass circles and it's holds up great. It's basically am HD28V with a PA neck and fancy pickup system.
In the end, any dreadnought, or larger guitar, should sound good playing bluegrass. You just need to be able to be heard over the banjos and mandolins.

In 1970 I bought a 1968 Martin D28 that has been my main bluegrass guitar. It's now in for the second or third time for some work. I've also used a D18 the post 2012 models I really like. I also like to play for my own enjoyment music I grew up with Johnny Cash, Dylan, Waylon Jennings the D18 and a new J45 I use for that. But my D28 is my bluegrass guitar. I've thought about getting an HD28 and would also like to play the new D28 at some point. If you could get your hands on an older Martin like my D28 you might really like it. Problem is the cost the luthier told me what I could probably get if I sold mine. I was shocked as I think I paid like $450 for it with a case in 1970.

I think that the D18 ticks boxes best. I owned one, and have another on order with a different neck.
I also have owned the D28, and I still own an HD28. I think they will all work great, and it's much more the player than the guitar. But make sure you like the neck shape and width of whichever model you choose.
