Definitely anything by Rodrigo y Gabriela is worth a listen. Try "Tamacun" and their new album "11:11"

Try his album "Weed". Stripped down acoustic versions of his songs. A really great album.

Allow me to toss in some solo-acoustic live albums (in addition to the afore-mentioned Jackson Browne albums):

Luka Bloom, "Amsterdam"
Greg Brown, "Yellow Dog"
Shawn Colvin, "Live '88" & "Live"
Patty Larkin, "In the Square" & "A Gogo"
Dougie MacLean, "Live from the Ends of the Earth"
Harry Manx, "Road Ragas"
Matt Nathanson, "At the Point"
Glen Phillips, "Live at Largo"
Josh Ritter, "Live at the Record Exchange" & "4 Songs Live"
Martin Sexton, "Solo"
Dar Williams, "Out There Live"
Nancy Wilson (Heart), "Live at McCabe's Guitar Shop"

Ritter also has a largely-acoustic live album, "In the Dark," with his band, and another largely-acoustic live album is Patty Griffin's "A Kiss in Time" (also check out her solo-acoustic studio album, "Living with Ghosts"). And then there's The Pretenders' "Isle of View," Sexton has a live album with his band that's largely acoustic, and there are several Cowboy Junkies live albums that are largely acoustic, and of course a wonderful mellow band, Over the Rhine, has several piano-and-acoustic-guitar live and studio albums, and...

Paul Simon solo stuff, Simon and Garfunkel. Great fingerstyle guitar. I'm working on Homeward Bound right now. Tough.

Also first acoustic Hot Tuna record. I think they've already been mentioned.
Another vote for Beggar's Banquet and Let it Bleed by the Stones. Great guitar. Their version of R Johnson's Love in Vain Blues is a great example.

Some more that have probably been mentioned already:
Anything by the Eagles.
Who's Next (Behind Blue Eyes)
Dust in The Wind, Kansas
Blind Faith
Dylan
Steve Miller especially the early stuff (Pre Joker, like Brave New World, Sailor, Your Saving Grace, etc)
Buffalo Springfield
CrosbyStillsNashYoung together and separately
Neil Young acoustic stuff- there's lots of it.
Check out the great version of Reptile on Clapton's One More Car, One More Rider. The DVD is outstanding!

Oh yeah, another vote for Workingman's Dead!!

I remember reading a good article on this on Fretbase last year. I was able to dig it up here. I had forgotten how many people liked Jackson Browne's two acoustic live albums.

+1 for Clapton "Unplugged" and anything Eagles. Gotta include John Denver and Bob Seger too.

BTW- Neil Young's "Live At Massey Hall" recorded in Ontario in the early 70's made me re-realize what an amazing artist Neil is. Some people make fun of his voice like they do Dylan's- but on this record it has a unique haunting, quality that really pulls you in. It's also great to hear these 'classics' being introduced for the first time. Young's guitar playing is really impressive for his age- with a solid rhythm and wonderful use of open tunings. I think this is a must listen for aspiring guitarist/songwriters..

I know- I'm hogging the stage here but one more artist not mentioned: Richard Shindell. Someone lent me "Somewhere Near Patterson" about 5 years ago and I am a convert. He is the real deal as he posesses the holy trifecta- He's an awesome singer, incerdible guitarst, and one of the most powerful songwriter/story teleers I've ever heard. Too many songs to mention but a few good ones are: (you can youtube it)

"Wisteria"
"There Goes Mavis" (great playing)
"Transit" (major goosebumbs)
"Reunion Hill"...

Not exactly dance music (lol) but great for a long ride..
