I made a guitar with figured EIR that is pretty cool. The wood itself didn't display much of a tap tone. But it made up into a very nice sounding guitar. And it looks pretty cool too.

Here's the EIR back of a Martin 00-28VS that I owned and loved. I really liked the dark stripes in it as opposed to the very even and straight grain one usually sees:
 And speaking for straight and even grain, here's a nice back shot of my Kronbauer SMB with some master grade EIR - also, note the flamed Koa binding:
