It depends on her vocal range, but some good old stuff I would recommend are:

Janis Ian (anything from the album "Between the Lines")

Carole King

Roberta Flack (sp?)

My wife has had some success singing Neil Young songs such as Tell Me Why and Heart of Gold. She has also done a rendition of City of New Orleans (Steve Goodman) that I think sounded pretty good, and Luck Man (Emerson, Lake and Palmer) which gave it a surprisingly realistic fresh twist. Dare to experiment and do the unexpected...the results may surprise you!
