Why not Titebond or Fish or Hide Glue on the sides? Just curious.

Those three glues are water based therefore spreading a water based glue, over a wide, thin area (ie a pair of sides to be laminated sides) would likely result in a set of sides that one might think came from the Lay's potato chip factory ;( Using a solvent based glue, one does not have to worry so much about moisture induced cupping or excessive movement in the wood as the glue cures.
