I would definitely choose rosewood over sapele. I had a sapele 310 once and it didn't have the resonance of rosewood; it was a bit boring.
Are you sure you want the grand concert? It would be perfect for a couch picker and lighter strummer, as you describe. It may lack volume for other purposes. The grand auditorium is a more all-around guitar---very comfortable, better strummer, but the grand concert might be more comfortable as a couch guitar, if that's your main use.
