I agree with your feelings on the mahogany. I've got a fairly good pile of it and I sometimes forget to stop and admire its simple beauty.
The air gaps are the built in liners. I use a technique I got from Jeremy Clark, who got it from Sergei De jonge. The sides are made from three pieces of wood, the outside show piece, a kerfed layer of western red cedar and then the inside laminate. These sides make a very sturdy rim.
