Wow- 3 pages deep and not a mention of Crosby, Stills, and Nash's first album: CSN... songs like "Suite: Judy Blue Eyes: and "Guinnevere" etc.. this is an acoustic must IMHO. Also their Deja Vu album is a classic. Great Martin tones on these.

Also I like:
Cat Stevens- "Tea For The Tillerman" and "Teaser And The Firecat"
Joni Mitchell- "Blue" , "Miles Of Aisles" almost any early stuff- later on "Night Ride Home" is a good one
Jethro Tull- "Thick As A Brick"
James Taylor-too much to mention
