At present the Musical Instrument Museum (MIM) in Phoenix has an amazing exhibit of acoustic instruments on display. They are displayed and currated with video and print commentary about who has played them and how they are built. I heartily recommend this exhibit if you're in the area-and admission is only $10 for this exhibit (admission to the rest of the museum is more $, but who cares about instruments that aren't acoustic guitars, mandolins, etc.
