I'm working on trying to finish learning 2 songs right now. Thing is, I'm getting tired of working on the same thing over and over. What is a nice sounding fingerstyle piece that sounds good but is relatively easy to play?

It's gonna have to be solo fingerstyle, not sure if I'll ever go down the vocals route. How you been Maak?

Funny you mention Silent Night in key of G. When I first started learning fingerstyle, I managed to get a simple version of that under my fingers. It sounds great. Somewhere Over the Rainbow has piqued my interest. If I can find a good tab I'll give it a whirl.
I'm having trouble with the 2 pieces I'm working on now because after the first 8 bars I can't seem to find a pattern to the songs. Therefore I'm having trouble committing them to memory. I learned Darcy's Guitar pretty quickly cuz it has a pretty easily discernible pattern if that makes sense.

I can't remember if I've recommended this to you before, but have you tried Ed Gerhard's "The Water is Wide"? That arrangement and the challenging phrasing it entails is pretty much a "rite of passage" for many fingerstylists.
You can try Pete's version too, since you have his book.

I use that as a teaching/learning piece, and have written a duet part to it which I do with both my gigging partner when we play-out, and with students for Guitar Society.
It's a fun little piece with some great technique.
Why not figure out your own version of Somewhere Over The Rainbow and just vary it by octave and keep it simple. You can elaborate it later as you play it more and incorporate more ideas as you grow into it.
A lot of my best arrangements started out as simple hacks of a single verse/chorus of a song in a single octave formed around the melody.
Another is in key of D and is The Water Is Wide. Very simple to construct a simple version of it...and I love it in Dropped D. Here's an old video of me doing it in the living room - if you can steal any of it, please do.

Hope this helps inspire you to try some arrangements on your own.
